Preparation (grandma style) :

In this recipe we are going to prepare the meat stew with pa tatas in the classic style, just as our grandmothers did.

Setting out the ingredients

  • Cut the tomato into medium cubes, the carrot on wheels and the parsley in very small pieces.
  • Peel the potatoes, the onions and the garlic cloves. Cut the first into large cubes, the second into small pieces and the last into very small pieces.
  • Wash the meat and remove all traces of white fat. Cut into large pieces. Spice and flour slightly.

Sautéed and poached

  • Covers the bottom of a large pot (that has a lid) with the oil and heat.
  • Add the garlic and stir carefully so it does not burn. Then add the bay leaves. Rehoga.
  • Add the onion to the mixture. Wait two minutes, and add the carrots too. Let poach for 10 minutes.
  • Add the meat. Sauté until the surface is golden.
  • Pour the tomato puree, the tomato into pieces, the parsley and the peas. Mix with all the ingredients that are already in the pan.

Cooking

  • Cover everything with the wine. If necessary, pour water (or homemade meat broth) only until the liquid is flush with the ingredients. Do not pass or the plate will be watered down.
  • Add salt and pepper to taste.
  • Leave to cook over low heat for forty minutes.
  • Past this time, add the chopped potatoes and cook for 30 minutes more.
  • When the cooking time is over, take out and taste a piece of meat to check the texture. It must be very soft. If it still does not have the desired texture, cook longer.
  • Once the meat has the desired texture, rectify the seasoning with more salt and pepper to taste, if necessary.
